Leafy greens, like mustard greens, collard greens and turnip greens are known as “superfoods” because they are packed with vitamins, minerals and antioxidants that keep our bodies healthy. Additionally, they are an excellent source of fiber, which helps us to feel fuller for longer. However, in the south, we tend to jazz up these foods with flavorful fat, like ham hock. As a result, that quickly depreciates the nutritional value of these green super foods by adding unnecessary calories.
In a recent article featured in the Huffington Post, a fellow dietitian provides some tips on how to cook greens with leaner ingredients while also maintaining the flavor. For example, pork loin and skinless chicken can add a similar “meaty” flavor but without all the excess fat found in ham hock. Another option would be to add turkey tasso which is infused with flavors of ham and bacon but has fewer calories.
