Greek Yogurt Chicken Salad

Chicken salad is a great option when you are meal prepping for the week. You can make a large batch and have different versions throughout the week (like a chicken salad and tomato pita or chicken salad on a bed of lettuce). However, not all chicken salads are created equal. If you make your chicken salad with regular mayonnaise, it’s going to be packed with added fat, which in turn, makes it a calorie-rich meal.  However, you can replace the mayonnaise with greek yogurt for a lighter alternative, which will decrease the fat content and increase the protein content helping you to feel fuller for longer. Check out this great chicken salad recipe that Amanda prepares in the spring and summer months:


  • 1 ripe avocado
  • ½ cup plain 0% fat greek yogurt
  • ½ tsp garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon salt
  • ¼ teaspoon ground pepper
  • 2 cups finely shredded or chopped chicken breast
  • ½ red oinion, chopped
  • 1 small lime

Combine all ingredients together in a medium bowl.  Portion out about ½ cup per sitting and enjoy!
