Greek Quinoa Salad

Looking for a twist on a traditional salad? Try this Greek Quinoa Salad, which is a nutritious make-ahead option that you can enjoy throughout the week. The combination of the quinoa and chickpeas offers great texture, while the veggies add a bright pop of color, and the feta cheese adds the perfect touch of creaminess. Quinoa is a whole grain, containing both plant-based protein and fiber. One cup of cooked quinoa contains about 8 grams of protein and 5 grams of fiber. You can eat this salad as a side dish or serve with hummus and warm pita bread as your entrée!

Ingredients:

  • 1 cup quinoa, dry
  • 1-pint cherry tomatoes, sliced in half
  • ½ English cucumber, chopped
  • ½ red bell pepper
  • ¼ cup purple onion, finely chopped
  • 1 can chickpeas, drained
  • ¼ cup kalamata olives, halved
  • ½ cup container feta
  • ½ bunch fresh parsely, finely chopped

Dressing:

  • ¼ cup olive oil
  • ¼ cup red wine vinegar
  • ½ tsp salt
  • ¼ tsp pepper
  • 1 tsp dried oregano 

Instructions:

  1. Cook quinoa according to package instructions. Once cooked, remove from heat and let chill.
  2. In a separate bowl, mix together dressing ingredients.
  3. In a large bowl, add chilled quinoa, chopped veggies, chickpeas, and fresh parsely.
