What We’re Eating: Chicken and Vegetable Kabobs

Summertime means backyard BBQ’s and time spent with family and friends. Try out a new recipe this year that is full of vitamins and minerals, packed with protein, and is fun to eat (and prepare)! Kabobs are a great choice because they provide a variety of vegetables, lean protein, and can be customizable. Use your favorite vegetables and vary your protein sources for a summer meal that is never boring.

Ingredients

  • 2 small zucchinis
  • 1 yellow bell peppers
  • 1 orange bell pepper
  • 1 red onion
  • 1 lb chicken
  • ½ Tbsp minced ginger
  • 2 cloves minced garlic
  • ¼ cup olive oil

Instructions

Step 1:
In a small bowl mix ginger, garlic, and olive oil. Set aside.

Step 2:
Pre-heat grill to medium/high heat.

Step 3:
Cut zucchini, bell peppers, onion and chicken into bite size pieces (~1 inch).

Step 4:
Coat prepared vegetables and chicken with the ginger, garlic and oil mixture. Place meat and vegetables on a skewer.

Step 5:
Grill skewers for 10-15 minutes or until chicken is cooked. Rotate the kabobs every few minutes.

Becca is a MUSC Dietetic Intern with a bachelor’s degree in exercise science from High Point University and master’s degree in nutrition and physical activity from James Madison University. Becca’s concentration in the MUSC Dietetic Internship program is Community Nutrition Promotion. She is looking forward to improving the health and quality of life of her patients through nutrition in the future.
