Holiday Chocolate Bark

As the holiday season approaches, it’s time to start thinking about festive dishes to make and share with others. It can be difficult to find healthy holiday recipes, especially ones that involve chocolate. Each topping on this bark packs in healthy ingredients – like protein, healthy fat and vitamins – making this simple and customizable chocolate bark the perfect dessert to bring to your holiday party this year.

Ingredients

  • 6oz dark chocolate (opt for 70% cacao or higher)
  • 1/4 cup raw pistachios
  • 1/4 cup pomegranate seeds
  • 2 tbsp shredded coconut

Other options for chocolate bark toppings include:

  • Dried fruit (cherries, blueberries, cranberries)
  • Nuts (crushed walnuts, pecans or cashews)
  • Seeds (pepitas, sunflower or pumpkin seeds)

Instructions

  1. Line a baking sheet with parchment paper and set aside.
  2. Place chocolate in a microwave-safe bowl. Microwave at 20 percent power for 30 seconds; remove bowl from microwave and stir. Repeat process about four or five times, microwaving and stirring until most of the chocolate has melted. Continue stirring until the chocolate is fully melted and smooth.
  3. Pour melted chocolate onto the prepared baking tray. Spread to 1/8-inch thickness. While the chocolate is still warm, sprinkle with pomegranate seeds, chopped pistachios, and shredded coconut.
  4. To set, place tray in the fridge for 15 to 20 minutes or in the freezer for 10 to 15 minutes. Break the bark into pieces and serve.
