Apple Cinnamon and Walnut Bran Muffins

Getting enough fiber in throughout the day can be difficult, however adding whole grains into your diet can help. Flax seed, whole wheat flour and oat bran are just a few ingredients that can add fiber to any baked good, without changing the flavor. With the addition of unsweetened applesauce, cinnamon, honey and almond milk, these muffins are sure to add spice to your breakfast without all of the added sugar. Try making these muffins for a hearty and fiber-packed breakfast.

Ingredients

  • 2 Tbsp ground flax seed
  • 4 Tbsp water
  • 1 1/3 cup whole wheat flour
  • 1 Tbsp baking powder
  • 1/4 tsp salt
  • 1 Tbsp cinnamon
  • 2 cups oat bran
  • 1 cup unsweetened apple sauce
  • 1 cup almond milk
  • 4 Tbsp honey
  • 2 Tbsp olive oil
  • 3/4 cup apple, diced
  • 1/4 cup walnuts, chopped

Directions

  1. Preheat oven to 400 F.
  2. Place flax seed and water in a cup to allow flax seed to bloom/gel.
  3. In a small bowl, mix flour, baking powder, salt and cinnamon.
  4. In a large bowl, mix oat bran, apple sauce, almond milk and honey. Let this mixture set for 2 minutes to allow the cereal to soften. After 2 minutes add olive oil and flax seed mixture. Beat with hand mixer or beat well by hand.
  5. Add flour mixture to wet ingredients and mix until well incorporated. Fold in diced apples and chopped walnuts.
  6. Prepare muffin tin with paper liners. Distribute mix evenly into 12-16 muffin cups.
  7. Bake muffins for 18 minutes or until brown on top and a toothpick inserted into muffin comes out clean.
