Breakfast Egg Bites

Are breakfast items always boring for you? Are you in a rush every morning and forget to eat breakfast? Egg bites have been the popular craze in all coffee shops and are known to be quick, easy, and customizable. Egg bites can be a good start to your morning by providing you with a good source of protein and produce. If creamier eggs are desired, consider adding cottage or ricotta cheese, which provides additional protein. These egg bites can be prepared ahead of time, frozen, and reheated to help save time. Below is a basic recipe, but feel free to customize it any way you like!

Egg bites

Ingredients

12 large eggs
¼ Cup of cottage cheese
1 medium tomato, diced
1 cup of spinach
½ cup of mushrooms, sliced
Salt and pepper to taste

Instructions

  1. Gather ingredients and preheat oven to 350 degrees F.
  2. Spray 12 count muffin tin with nonstick cooking spray.
  3. In a large mixing bowl, combine eggs and cottage cheese until evenly distributed and creamy. Once eggs and cottage cheese are evenly distributed, combine all other ingredients in the bowl.
  4. After all ingredients are combines, pour mixture into muffin tins. Do not fill muffin tins all the way up, leave some room so they can expand without overfilling, which is about ¾ of the way.
  5. Place muffin tin in the oven and let bake for about 15-20 minutes or thoroughly cooked. Once finished, let egg bites cool and enjoy!
