Chickpea Cucumber Salad

If you’re looking for an herby and refreshing meal or side dish, this salad is the perfect thing! It’s crunchy, creamy and full of flavor. Enjoy it on it’s own or pair with baked chicken for a protein-packed meal.

Ingredients

  • 1 15oz can chickpeas
  • 4 mini cucumbers
  • 1/3 cup chopped red onion
  • 1/2 cup feta cheese
  • Juice from ½ lemon
  • Zest from ½ lemon
  • 2 tbsp olive oil
  • Handful of chopped dill
  • Handful of chopped parsley

Instructions

  1. Rinse and drain chickpeas. Dice cucumbers and red onion.
  2. Add first four ingredients to a bowl.
  3. Add lemon juice, zest, olive oil and herbs to bowl.
  4. Mix and enjoy!
